Coffee Gelato

Looking for a cold and creamy dessert that has no added sugar, no nuts and no dairy? Catie has a great recipe for Coffee Gelato that fits the bill and is easy to make. Here it is:
Coffee Gelato (vegan, nut-free, no added sugar)
Prep Time: 3-4 hours (freezing of banana, chilling of coffee/avocado)
Active Time: > 5 min
Ingredients: 1 ripe banana (sliced and previously frozen 3-4 hours)
1/4 ripe avocado (chilled and cubed)
2 tsp cold coffee or espresso (chilled)
Steps:
Prep: 1 Slice very ripe banana and freeze it in a sealed bag for 3-4 hours.
2 If you don't have leftover coffee or espresso, make some fresh and let it come to room temp, then chill in the fridge.
3 Stick avocado in fridge, if you're not storing it there.
Blend: 1. Cube avocado into blender/immersion container/mixer. Add frozen banana pieces and cold coffee.
2. Blend together until smooth. (Immersion blenders work really well for this)
3. Eat right away with a small spoon. Enjoy! :)
