Bright Cajun Spice Mix

Sunday is Father’s Day, and all over the country, dads will be firing up their grills. In our family, burgers and brats are the classic Father’s Day spread, along with my grandmother’s potato salad and lots of cold brew coffee. For those dads who prefer a spicier day, Catie has created her own, Cajun inspired spice blend that adds a lively, Cajun kick to any grilled meat. We’ve enjoyed it as a rub on grilled red snapper and chicken. It would probably also be a great way to spice up some burgers. Here’s the recipe:
Bright Cajun Spice Mix (low salt)
Ingredients: 1 Tb Paprika (sweet, hot or smoked, depending on your preference)
1 Tb Oregano
1 Tb Thyme
1 Tb Finely Ground Coffee/Espresso
1 tsp Garlic Powder (roasted garlic powder adds a nice complexity)
1 tsp Onion Powder
1 tsp Cayenne Pepper (plus optional hot pepper flakes to add heat to taste)
1 tsp Cumin (optional, not always/traditionally in Cajun blends, but I enjoy the additional complexity)
1/2 tsp White Pepper
1/2 tsp Black Pepper
1/2 tsp salt
Steps: 1.Blend together spices and store in an airtight container.
Use on meats, veggies, or to spice up grains. Great as a rub. Use when roasting, grilling, or pan frying. Also adds well to sauces and soups.
