Sweet Chili Salmon and Zucchini Planks

Sweet Chili Salmon and Zucchini Planks, two more recipes from Catie that use coffee in delicious and interesting ways. Enjoy!
Sweet Chili Salmon
Time: ~25 mins
Sweet Chili Rub: 1 tsp oregano
1/2 tsp cumin
1/2 tsp finely ground coffee
1/4 tsp ground chili flakes (or chili powder)
1/4 tsp garlic powder
1/4 tsp cinnamon
1/4 tsp nutmeg
Other Ingredients: 2, ~200 gram pieces of salmon (2 ~ 7oz or 0.44 lb pieces of fresh salmon)
1 tsp lime juice
Olive oil to drizzle
Salt and pepper to taste
Steps: 1. Turn on oven to 210 C/ 410 F.
2. Mix all the Sweet Chili Rub ingredients into a small bowl.
3. Place salmon onto lightly oiled pan/sheet, skin side down. (just so the skin doesn't become impossibly adhered to the pan/sheet)
4. Lightly coat salmon with olive oil, drizzle or brush on. Drizzle 1/2 tsp lime over each piece.
5. Generously sprinkle SCR over the top of the fish. Add salt and pepper to taste, fresh ground is lovely. (A bit of salt nice but unnecessary, for those watching sodium.)
6. Bake salmon in heated oven for 15 minutes. For those with a grill setting, grill for up to 5 minutes afterwards for a crispy surface.
7. Remove from oven, carefully remove from skin and enjoy!
Notes for making it a meal: The rub goes a long way, and I had enough left over to make Sweet Chili Zucchini Planks. The sweet, rich heat of the salmon pairs very well with whole-grain rices or quinoa and salad. I made this dish with limed black rice and avocado and a arugula salad with balsamic dressing.
Sweet Chili Zucchini Planks
Time: ~25 mins
Sweet Chili Rub: 1 tsp oregano
1/2 tsp cumin
1/2 tsp finely ground coffee
1/4 tsp ground chili flakes (or chili powder)
1/4 tsp garlic powder
1/4 tsp cinnamon
1/4 tsp nutmeg
Other Ingredients: 1-2 medium zucchinis
Olive oil to coat
Salt and pepper to taste
Steps: 1. Turn on oven to 210 C/ 410 F.
2. Mix all the Sweet Chili Rub ingredients into a small bowl.
3. Slice the zucchinis into long planks, about 1/4 inch thick and place on oiled baking sheet.
4. Drizzle or brush with olive oil (flavored oils, like a chili or a truffle oil, add a lovely complexity or enhancement to the rub's flavor)
5. Sprinkle the zucchini with Sweet Chili Rub. Add salt and pepper to taste.
6. Bake in oven for 15-20 minutes. If you have a grill setting, grill for up to the last 5 minutes for a bit of crisp.
7. Remove, serve and enjoy!
