Spotlight on...Organic Nicaragua Paraiso

2019 has been a great year for smooth, sweet and rich Central American coffees. Costa Rica, El Salvador, Guatemala and Panama have all produced amazing coffee this year. So have Mexico and Honduras. Now Nicaragua joins the pack with a lovely, organically certified coffee, Organic Nicaragua Paraiso.
Grown on five, small farms, collectively known as J&M Family Coffee, Organic Nicaragua Paraiso started with a dream. Juan de Dios Castillo and his wife Miriam Aruaz began buying land in the 1980's with money they earned working as tailors. The land became Paraiso farms and has been passed on to Juan and Miriam's five children, who formed J&M Family Coffee. Their goal is to export high quality coffee using sustainable growing practices. They also own their own wet and dry mill, so the family has full control of their coffee's processing.
The care they take with the coffee shows in the cup. At a light (City) roast level, Organic Nicaragua Paraiso is a smooth, rich coffee with the flavor of nut-filled toffee brightened by a spritz of citrus and balanced by lingering cocoa richness. At a medium roast level (Full City), the flavor is even richer. Since the coffee is grown between 3770 and 4900 feet above sea level, the beans take any roast level well. Darker roast levels brew into a sweeter, bolder cup. Organic Nicaragua Paraiso is a lovely coffee, no matter which roast level you prefer.
