Catie's Pumpkin Spice Espresso and Latte

This post contains two recipes for those who want to create their own Pumpkin Spice coffee drinks, Pumpkin Spice Espresso and Pumpkin Spice Latte. Both use Catie’s Bright Pumpkin Spice mix, both can be made sugar and/or dairy free and both are delicious!
Let’s start with the espresso:

Pumpkin Spice Espresso
Ingredients: 1 shot espresso
1/4-1/2 tsp Pumpkin Spice (bright or other blend, 1/4 tsp recommended, at least at first)
Steps: 1. Blend Pumpkin Spice into fresh shot of espresso and enjoy!
Notes: If pulling your own shots, can pull espresso over the spice by putting the spice into the bottom of your shot glass. Add sweetener to your espresso if you like sweet black espresso or sweetened pumpkin spice. I don't add sweetener to my coffee drinks. 1/2 tsp is a lot of spice and shifts the flavor toward the spice (think warm, liquid, espresso-flavored pumpkin spice). It will settle more, so stir in very well, and maybe re-stir. I found a well-stirred 1/4 tsp to be more coffee-spice balanced. Recipe easily doubles for 2 shots of espresso and 1/2 to 1 tsp spice.

And for those of us who really like sweet and creamy coffee drinks, here’s Catie’s Pumpkin Spice Latte:

Pumpkin Spice Latte
Note: There are two places you can initially add the pumpkin spice, into the milk or into the espresso. Steps include both options, you'll want to find which works best and tastes best to you.
Ingredients: 1 cup milk of choice (I use almond)
2 shots espresso
1 tsp Pumpkin Spice (Bright blend or other/traditional/pre-made blend)
Sweetener of choice (amount of choice) Note: I do not sweeten my coffee drinks. The milk and spices add plenty of sweetness for me.
Steps: 1. Steam milk to desired temperature. If adding spice to milk, add before or after steaming/warming. If before, make sure to clean you steam wand extra-well. If after, stir the spice in with extra vigor (it likes to settle). Set aside while pulling espresso shots.
2. Pull 2 espresso shots. If adding spice to espresso, I recommend adding it before to the bottom of shot glasses and pulling the espresso over the spice mix. If adding after, try to stir-in without disturbing the creme too much.
3. Pour the shots into the milk, add any desired sweetener, stir well, and enjoy!
